Rosemary, or Salvia rosmarinus with its Latin name, is an evergreen shrub and originally from the Mediterranean region. It is a plant that can withstand longer periods without water and can grow quite big (however, this does not improve the aromas).
For me, rosemary is a must in any roast; my favorite use of rosemary is a lamb fillet crust made with chopped rosemary, sea salt, lemon zest and mustard.
