Rapini Soup

An unusual ingredient for soup, but very tasty. Rapini (also known as  turnip greens or turnip-tops) have a slightly nutty flavor. 

You can use rapini in the same way you use spinach: soups, mashes, stir-fries. 

Rapini or turnip-tops are quite seasonal - available in spring only, but if they are on offer, make sure to use the opportunity to make this simple yet delicious soup.

The preparation of this soup takes minutes only:

Melt some butter in a pan, add a finely chopped clove of garlic and fry for 30 seconds, add in the rapini and stir-fry for a minute or two, add water and some vegetable stock (cubes if need be), simmer for a few minutes and blitz to the smoothness you prefer. 

Feeling lucky? Serve with a dollop of sour cream.
